Blueberry Pancakes

Saturday was a good day. A good day for me is finding a cast iron frying pan reduced to £5. A good day is cycling into town and finding a kingsize duvet  for £2.99 in the charity shop that you know will make awesome cushion covers. It's even a good day when you have to cycle back in pouring rain, because at least you got the bike out and exercised your cake made thighs. And, as all good days do, it ended with sushi.

How do you follow a good day? How do you try to make Sunday as happy as Saturday?


Specifically, pancakes with beautifully blue blueberries. Drizzled with that most precious of syrups...maple. 

The decision to make these seemed like fate. I had, for some reason, bought buttermilk on Friday. I did not know what I was going to use it for but I knew I could find something. The original recipe just called for normal milk, which you can still use, but buttermilk makes the pancakes so light and fluffy. There is no sugar in this recipe but there is enough sweetness in the hot blueberries when they are cooked. I'd go so far as to say they aren't that bad for you, but don't take that as law. 

I didn't even know I was going to make these when I woke up. I just decided in a flash, and sometimes, those are the best recipes.

Blueberry Pancakes

3 large eggs
115g/4oz plain flour
1 heaped teaspoon baking powder
140ml/5fl oz buttermilk
125g blueberries
a pinch of salt

  1. Separate the eggs, putting the whites into one bowl and the yolks into another. Add the flour, baking powder and buttermilk to the yolks and mix to a smooth thick batter. 
  2. Whisk the whites with the salt until they form stiff peaks. I started doing this by hand but I recommend making it easy for yourself on a Sunday morning and using an electric whisk. Fold into the batter and then fold in the blueberries, making sure not to break any.
  3. Heat a good non-stick pan on a medium heat (This is where I got to play with my new £5 pan). I sprayed a little Frylight onto the pan as well. Spoon some of the batter into the pan and fry for a couple of minutes until it starts to look golden and firm. After a couple of minutes flip it over and cook the other side. Continue frying until both sides are golden.

Serve with a little drizzle of syrup or whatever takes your fancy. And, of course, a good cup of coffee.
