It's hot, it's sticky and you probably don't feel like spending forever in the kitchen.
I've been at work all day and I know I don't always feel like chopping, frying, boiling and baking for an hour but I know I could easily (always) be persuaded to make these stilton and balsamic vinegar baked crisps.
They take a minute to throw together and 2-3 minutes in the oven and you only need to use one plate...saves on washing up!
A few years ago I used to visit this brilliant cafe called Koo in Chesterfield. They still have this on the menu, called 'Koo Bistro Crisps'. I've often thought of them in the years since I moved away and longed to recreate them.
They are simply amazing. Nachos re-worked. In fact, I'd go so far as to say I'd eat these over nachos any day.
I stumbled upon a large bottle of balsamic vinegar in Aldi last week for 99p! I probably got far too excited over this but if you're passing Aldi this week I urge you to go forth and purchase 99p balsamic vinegar. Then go and buy blue cheese and kettle chips and create something wonderful.
Stilton and Balsamic Vinegar Baked Crisps
Recipe from Koo Coffee and Deli in Chesterfield
lightly salted kettle chips
stilton blue cheese
- Preheat your oven to 180 C/350 F
- Spread the crisps out on your plate.
- Crumble the stilton over the top.
- Drizzle the balsamic vinegar on, as much or as little as you like.
- Bake in the oven for 2-3 minutes until the cheese just starts to bubble. Keep an eye on it.
This recipe is all about preference, throw as much cheese and vinegar on there as you like. Eat straight off the plate with a cold beer.
