I know, I know, this isn't a cake, or even a bake but I wanted to share it with you because it's January and most of us have resolutions to be healthy in January. They are usually gone by February but let's continue with the best of intentions.
I decided this year that my main goal was to take good care of myself in 2013. I'll be 27 in April (arrrrgh!) and I feel I hadn't been treating myself very well and I'm worth a bit of looking after. So I've given up diet coke in the week, I was drinking waaay too much, largely out of boredom I think, I've started bringing better foods into my daily life - think quinoa, flaxseeds, almond butter and lots of water - all to balance out the sugary side of being a baking blogger. So I get to eat cake as I photograph it and not feel quite as bad about it.
I love smoothies, homemade ones, not store bought. They are a great, quick way of getting energy in the morning and you can make them with anything you like. I like them on a Saturday morning, sat in PJs waiting for my brain to wake up. This is my particular favourite blend, I love the cherry flavour especially. I use frozen because they are ready stoned and keep the smoothie nice and cold. I cannot not put banana in. Bananas are my favourite fruit and I'll always throw them in any smoothie. I'm getting much more into natural sweeteners like agave and just a tablespoon is perfect in this. The flaxseed is a great source of omega 3 and fibre, I've been mixing a tablespoon in my breakfast in the morning and I feel less bloated and much better in myelf. Everything you need for a healthy start in the morning.
I just want to take this opportunity to introduce you to the newest member of our little family, Evie the kitten...
We have only had her since Friday night but she is the best decision we ever made. We drove to Southport to collect her and fell in love straight away. As I write this she is asleep by my foot. I have become one of those people who is obsessed with their cat, and I don't care! My Instagram feed (sophiecakehunter) will just be cats and cakes from now on. But for now we'll make smoothies and feel super good about ourselves.
Healthy Start Cherry Banana Smoothie
makes 2 glasses
400g low fat natural yoghurt
70g frozen or fresh cherries, de-stoned
50g oats, plus extra to sprinkle
1 tablespoon agave nectar
1 1/2 tablespoons flaxseeds
1 medium banana, chopped
Not many instructions here...just throw it all in a blender, mix until smooth and pour into glasses.
Top with a sprinkling of oats and serve.
