Yesterday I completely lost my baking mojo. This might explain why today I'm bringing you ice cream. In the end, the oven and I just were getting on. I burnt some biscuits. My bundt cake stuck to the tin. I attempted to make choux pastry with coconut oil (the idea came to me when swimming) which was a complete fail and they came out like upside down Yorkshire puddings. I made a flapjack,which on the surface looked great, but was rock hard. The only thing that went right was some madeleines but because of all my previous failures I just wasn't happy with them. Nothing I made worked. But it happens to the best of us.
Today everything just clicked and I was really happy with everything I made. It's bizarre how things can change so much. The ice cream part of this recipe was a great way for me to get my confidence back because it was so easy to make. Plus, it's totally guilt free.
I was really pleased with the caramel. I had been feeling inspired by Ashlae at Oh Ladycakes (such an amazing blog) and her easy caramel sauce. I wanted to attempt the same recipe however I ended up with another can of coconut milk that refused to separate in the fridge. Fear not, you can still make delicious caramel with coconut milk. It keeps in a sterilised jar for weeks and tastes perfect with the ice cream. 'How can you make ice cream with one ingredient?' I hear you ask. I stumbled across this recipe on Food 52 and I was amazed. It's made with just a bunch of bananas!

Turns out, because of bananas' high pectin it whips up just like Mr Whippy ice cream. You can also add anything to it like chocolate chips, berries, peanut butter. This is definitely going to be my go to recipe whenever I need ice cream but don't want to feel guilty.
I used whole cane sugar for the caramel sauce but dark or light brown sugar will work just as well. I ordered my whole cane sugar and coconut chips from Goodness Direct. I found it by accident but I think it's a great website. They stock everything and have a fantastic amount of coconut ingredients. You can get 200g of coconut oil for only £4.39, which is the cheapest I've seen. Their delivery was prompt as well. I'm not affiliated with them or anything, I just thought they were really good.

1 Ingredient Ice Cream with Vegan Caramel and Toasted Coconut
For the ice cream:
1 bunch of bananas
- Peel the bananas, chop into chunks and place on a tray or in a freezer bag. Pop in the freezer for 2 hours.
- After 2 hours, put the banana chunks into a food processor and blend. Keep blending until the bananas become smooth and look like soft serve ice cream.
- Mix in any extras at the end.
For the caramel:
125g whole cane sugar (or dark/light brown sugar)
400ml can of coconut milk
- Put the sugar and coconut milk in a heavy bottom pan over a medium-high heat. Whisk until the sugar dissolves.
- Boil the mixture for 20 minutes until it reduces by about half. Keep whisking occasionally as some skin will form on top.
- Decant the hot caramel into a sterilised jar and refrigerate.

- Toast the coconut in a dry pan over a high heat until the chips start to turn golden. Don't let them burn though.
Assemble to your taste and enjoy.
