This is it guys! This is the popcorn I've been searching for my whole life. It was kind of throw everything in and hope for the best but I did record the amounts so luckily I can tell you the recipe. I like to send popcorn in my foodie penpal boxes. It's fun and easy to transport when sealed in a ziplock bag. I always have to make double so Nick can eat one half of the mix. It's also pretty cheap to make. A 500g bag of corn kernels can cost 50p and you only need about 100g to make a massive bowl. And it's so much fun when it starts to pop...I'm really just a big kid, it's a wonder I don't make rice krispie cakes every week.
How nice has the weather been this weekend? We went for a walk yesterday and didn't take a jacket. It was lovely. We strolled into town to get a little exercise, I treated myself to new foundation and some nail polish (L'Oreal nude magique BB cream is actually magic for those of you who like makeup...I highly recommend it but that's as far as my beauty blogging goes!), we got cool lime refreshas in Starbucks - the best drink ever - and bought a large cafetiere from TK Maxx. We've been venturing into the world of 'proper' coffee and our tiny cafetiere only made 1 cup at a time, which is a bit of a pain so we picked up a lovely 8 cup one (this one, if you're interested) for only £9.99.
So, enough about my Saturday...I have a little giveaway for you guys. I have 2 tickets for The Cake and Bake Show in Manchester on 5-7 April. I went to the London show and it was a great day out. We saw Paul Hollywood, Paul A Young, Mitch Turner and met the lovely Tom from The Fabulous Baker Brothers. There were all sorts of stands and demonstrations about and it was great because you could get your hand stamped and leave and come back - I'm assuming the same will apply in Manchester -so we popped out for abit and then came back for another wander round and to catch some of the talks. Nick and I are going to the Manchester show as well on the Saturday so if you're there give me a nudge and say hi!

Brown Sugar Cinnamon Popcorn
(makes a large bowl)
100g popcorn kernels
2 tablespoons vegetable oil
100g unsalted butter
100g brown sugar
1 teaspoon cinnamon
caster sugar, to sprinkle
- Heat the vegetable oil in a large pan until hot, add the popcorn kernels and shake to coat in the oil. Place the lid on top and let sit on the heat. You will start to hear popping. Give the pan a shake every 30 seconds until the popping stops. Remove from the heat and spread the popcorn over a baking tray.
- In a smaller pan, melt the butter and mix in the brown sugar and cinnamon. Heat the mix until it starts to look caramel-y - about 3-5 minutes over a medium/high heat.
- Pour the mix over the popcorn and mix well to try and coat all of the corn.
- Finally a little sprinkle of caster sugar is nice as well.
- Transfer to a bowl and try to share.
