Messy Marshmallow Blondies

I had exciting news yesterday. I have been nominated in the Best Food Blog category for the Cosmopolitan Blog Awards 2013. I actually did a little yelp and ran into the living room to find Nick when I read it. I’m absolutely chuffed to even be in the same category as Mbakes and Rachel Phipps. If I can ask one more favour it would be that you vote for me by visiting here. I’m in category number 8. 

Following a very excitable phone call to my Mum I started to calm down a little and I realised how much I love writing this blog and how I need to show it more love than I have been doing. As a way of saying thank you to all those who nominated me I have created these seriously good messy marshmallow blondies.
You might think baking blondies in a tiny flat in this heat a fool’s errand but you will totally be rewarded when you eat some warm from the pan. I died. 

The middle is gooey and sticky and all the things marshmallow fluff and blondies should be when combined. 
The hardest thing about being pregnant and writing a [primarily] baking blog is that my sweet tooth took a bit of a vacation. It’s hard to be enthusiastic about butter and sugar when you really just want to eat more Mexican food.

However, these blondies have renewed my enthusiasm for the sweet stuff and I couldn’t have thought of a better way to get back into sugar. 

Something clicked in my head after eating it and all I could think about were new recipe ideas and combinations so I’m really excited to get cracking on these. Even more so because in two weeks we’ll have a proper kitchen and a garden and the most well lit living room ever (the amount of light it gets is so good it might as well be a photography studio). I cannot wait to try some food photography outside whilst the weather is still good…watch it rain in two weeks. 

Anyway, to the blondie recipe…

NOTE: I put two good size pinches of fleur de sel in this recipe, I like the hint of salt that comes through and it complements the sweetness of the blondies really well. If you prefer less salt, by all means put less in. 

Messy Marshmallow Blondies
(adapted from Smitten Kitchen)

250g unsalted butter, melted
440g light brown sugar
2 eggs
1/2 teaspoon vanilla extract
2 good pinches of salt
250g plain flour
100g dark chocolate chips
100g white chocolate chips
1x 213g jar Fluff (the spreadable marshmallow stuff)
  1. Line a baking tray with greaseproof paper and set aside. Preheat the oven to 180 C/350 F.
  2. Melt the butter in a pan and let cool slightly. Mix with the light brown sugar until smooth.
  3. Add the eggs and vanilla and mix in.
  4. Add the flour and salt, mix until well combined and then add in the chocolate chips.
  5. Spread two thirds of the mix along the bottom of the tray. Spoon out the marshmallow fluff on top of the blondie mix in the tray and try to spread it as evenly as you can. This is a messy job so please don’t be fussy about being neat because it won’t work. 
  6. Add the rest of the blondie mix on top of the fluff. Place in the oven for 35-40 minutes. Let cool for at least 15-20 minutes before tucking in because it will be molten in the middle.
